In House Ripening

A common question asked by our customers is how we ripen bananas. Bananas are a fruit with an extremely short shelf life, so they require thorough attention in order to ripen properly. Depending on the origin of the fruit, they will ripen differently at different temeratures. In business for over 60 years, we have mastered the ripening process and carry all color stages of bananas. This allows us to provide the highest quality products to our customers.
Bananas are shipped from South America to our location. Upon arrival we will break down each pallet and air-stack them so that air can flow through them evenly. The pallets are then stored in temperature controlled rooms, each set at different temperatures where we are able to dictate longevity of the ripening process. The bananas will be checked in each room daily and temperatures will be adjusted as needed. As orders from our customers are recieved we are able to provide different stages of ripened bananas with the highest quality of ripening.
  • Why go through the hasstle of hand stacking every box? As bananas ripen they produce large amounts of heat as they transition from starch to sugar. As a result, boxes in the center and bottom of the pallets ripen at a higher rate than those on the top. Air-stacking the boxes with space allows for even airflow and ripening throughout all of the boxes. Large ripening centers do not air-stack, in return their bananas will have a lesser shelf life. This uneven ripening creates poor quality and often spoilage that leaves many consumers having to discard uneatable product.
